    • 2 ½ tbsp of Cancun Taco Fest seasoning blend
    • 2 ½ tbsp of Creole Kick Carnival seasoning blend
    • 2 limes juiced
    • 2 cloves of minced garlic
    • 2 tbsp adobe sauce
    • 1 cup shredded cheese  ( Monterey jack or Colby )
  • Optional: Tortillas, Cilantro rice, Pico de gallo, Sour cream, Guacamole

Instructions:


  1. Start by combining the olive oil, kosher salt, minced garlic, adobe sauce, and juice from one lime in a large bowl. Add in the Cancun Taco Fest and Creole Kick Carnival seasoning blends, stirring until well mixed.
  2. Slice your chicken breasts into strips. Add them to the bowl, ensuring they are well coated in the marinade. Let them sit for at least 15 minutes.
  3. While the chicken is marinating, slice up your bell peppers and red onion. Coat the vegetables in the remaining marinade.
  4. Preheat your oven to 350°F . Arrange the marinated chicken and veggies on a large sheet pan in a single layer.
  5. Bake for 25-30 minutes or until the chicken is cooked through and the veggies are tender. Then broil for 3-5 minutes to get a slightly charred finish.
