I've got this absolutely amazing recipe for your next taco night that I just have to share with you - Mini Crunchy Taco Cups! These little bites of heaven are like a fun twist on the usual taco, with seasoned meat and gooey cheese layered in a cupcake pan using wonton wrappers. Trust me, they're gonna be a hit with everyone! And with the Cancun Taco Fest seasoning blend it's perfection!

Ingredients:
- 2 tsp olive oil
- 1 lb ground turkey or your favorite meat (for a veggie option, use 2 cups of cooked black beans, 1 orange bell pepper, and ½ onion more)
- ½ medium onion, diced
- 5 garlic cloves, minced
- 1 tbsp + 1 tsp Cancun Taco Fest seasoning
- 2 tbsp tomato paste
- ½ cup petite diced tomatoes
- ½ cup water
- ½ tsp dried oregano
- ½ tsp black pepper
- 1/2 tsp salt (to taste)
- 1 tsp dry chili flakes
- Oil to brush on pan
- 24 wonton wrappers
- 1 1/4 cups shredded cheese
Toppings:
- Mexican crema
- Sliced green onions
- Diced fresh tomatoes
- Salsa
- Olives
- Diced jalapeno
- Chopped cilantro
Here's how you make these yummy taco cups:
- Preheat your oven to 400°F. In a large pan, heat up the olive oil over medium-high heat. Toss in the onions and garlic, and let them cook for 2 minutes before adding your meat or veggie option. Keep stirring and breaking up the meat with a spatula.
- Next, add the diced tomatoes, tomato paste, Cancun Taco Fest seasoning, black pepper, oregano, dried chili flakes, water, and a pinch of salt to taste. Cook the mixture for about 6-7 minutes or until it's all cooked through.
- Now, grab a 12-cup muffin tin and give it a light brush with oil. Place a wonton wrapper in the bottom of each cup. Scoop a tablespoon of the meat mixture into each cup, then sprinkle 1 teaspoon of cheese on top.
