Creole Corn Ribs Recipe
Ingredients for Creole Kick Corn Ribs:
- 4 ears of fresh corn, shucked
- 4 tablespoons of extra-virgin olive oil
- 1 lime, cut in half
- 1 tablespoon of Creole Kick seasoning
- 3 cloves of garlic, minced
Ingredients for Creole Mayo Sauce:
- ¼ cup of mayonnaise
- ¼ cup of sour cream
- 1 tablespoon of freshly squeezed lime juice
- 2 cloves of garlic, minced
- 1 tablespoon of Creole Kick Carnival seasoning
For the garlic butter:
- 2 tbsp melted butter
- 2 cloves of minced garlic
Garnish
- Fresh chopped cilantro
- Parmesan cheese
- Chopped jalapeños
- Limes
Cooking Instructions:
- Prep the Creole Mayo Sauce: In a small bowl, whisk together the mayo, sour cream, lime juice, minced garlic, and Creole Kick Carnival seasoning. Keep it chilled in the fridge.
- Prep the Corn Ribs: Preheat your grill or oven or to 400ºF (200ºC). Secure each corn cob on a steady cutting board and split it into 4 equal “ribs”. It takes a bit of muscle, so be careful.
- Season the Corn Ribs: Blend your olive oil, Creole Kick seasoning, and minced garlic, then brush this mixture over the corn ribs.
- Cook the Corn Ribs: Grill or bake in the oven for 25 until they’re tender and slightly charred.
- Plate it up: Brush your corn ribs with melted butter and minced garlic. Arrange on a platter, add a squeeze of lime, and garnish with parmesan, jalapenos, and fresh cilantro. Serve with the chilled Creole mayo sauce.
