We marinate the salmon chunks in a mixture of Greek yogurt, our Tandoori Heaven Spice Blend, olive oil, minced garlic, and a dash of lime for that extra zest. Ingredients: 

  • 1 pound of fresh salmon, cut into cubes
  • For the Salmon Marinade:
    • 1/2 cup of Greek yogurt
    • 2 tablespoons of Tandoori Heaven Spice Blend
    • 2 tablespoons of olive oil
    • 3-4 cloves of minced garlic
    • 1 teaspoon of minced ginger
    • Juice of one lime
    • Pinch of salt
  • For the Dressing:
    • 1/4 cup of fresh cilantro
    • 1/4 cup of fresh mint
    • 1/2 cup of Greek yogurt
    • 1 clove of garlic, minced
    • Juice of one lime
    • 1/4 teaspoon of cumin
    • Salt to taste
  • For the Bowl:
    • Turmeric rice
    • Cooked green lentils
    • Persian cucumbers, sliced
    • Grape tomatoes
    • Pickled onions
    • Chopped cilantro 

 

Instructions:

  1. Begin by prepping the marinade for the salmon. Combine Greek yogurt, Tandoori Heaven Spice Blend, olive oil, minced garlic, minced ginger, lime juice, and a pinch of salt in a bowl. Toss the cubed salmon in the marinade until well coated, then allow to marinate for at least an hour.
  2. While your salmon is marinating, assemble your dressing. In a food processor, combine cilantro, mint, Greek yogurt, minced garlic, lime juice, cumin, and salt to taste. Blend until smooth.
  3. Preheat your oven to 375°F or heat up your grill. If baking, place salmon on a lined baking tray and bake for 10-12 minutes. If grilling, grill the salmon cubes for about 4 minutes per side until done to your liking.
  4. Now, it's time to assemble your bowl. Start with a base of turmeric rice, then layer with green lentils, sliced Persian cucumbers, grape tomatoes, chopped cilantro and pickled onions.
  5. Top your vibrant bowl with the cooked Tandoori salmon skewers and a generous drizzle of your fresh cilantro-mint dressing.
