Ingredients:
- 1 pound of fresh salmon, cut into cubes
- For the Salmon Marinade:
- 1/2 cup of Greek yogurt
- 2 tablespoons of Tandoori Heaven Spice Blend
- 2 tablespoons of olive oil
- 3-4 cloves of minced garlic
- 1 teaspoon of minced ginger
- Juice of one lime
- Pinch of salt
- For the Dressing:
- 1/4 cup of fresh cilantro
- 1/4 cup of fresh mint
- 1/2 cup of Greek yogurt
- 1 clove of garlic, minced
- Juice of one lime
- 1/4 teaspoon of cumin
- Salt to taste
- For the Bowl:
- Turmeric rice
- Cooked green lentils
- Persian cucumbers, sliced
- Grape tomatoes
- Pickled onions
- Chopped cilantro
Instructions:
- Begin by prepping the marinade for the salmon. Combine Greek yogurt, Tandoori Heaven Spice Blend, olive oil, minced garlic, minced ginger, lime juice, and a pinch of salt in a bowl. Toss the cubed salmon in the marinade until well coated, then allow to marinate for at least an hour.
